Mountain Cheese (Queijo da Serra)
The production of this cheese is done at various local cheese houses. These houses
are certified and can be visited. The artisanal practice of making this famous cheese
can be seen in the villages of Mogadouro and Carrapichana amongst others in the area
of Celorico da Beira. In this area there are many traditional cheese houses where one
can buy cheese directly from the producers.

Specialities:
pork sausage made of flour toasted in olive oil, sweet sausage done in the Gouveia
style, rice with spare-ribs, lean meat done in the Carripichana style, Aunt Arminda’s
codfish, Mondego trout in vinegar sauce.
Local Dishes
Rabbit Stew
Ingredients:
1 rabbit, onion cut in quarters, 1 clove of garlic, parsley, laurel, paprika,
white wine, and olive oil.
Preparation:
Place everything in a pot until it is half stewed. Place everything in a tray
with the sauce on top and allow it to brown in the oven. One can brown the potatoes
in the oven (done only with the oil to toast them). It can be served with potatoes.
Roasted Goat
Ingredients:
Goat, potatoes, salad, salt, olive oil, garlic, paprika, laurel and white wine.
Preparation:
Roast the goat in the oven with the seasonings. It can be served with roasted
potatoes and salad.
